Cranberries are seasonal fruits that are harvested and sold for a short period of time — usually 2–4 weeks from spring to mid-summer. Given its useful properties, you need to try to save the berries for the winter. How to do this is discussed in this article.
Selection and preparation of ingredients
For winter storage, fruits are selected in medium size and density. The color should be light red, saturated. The presence of the stalks is desirable, but is not necessary, since due to the density of the skin for storage, you can do without them.

The classic recipe for mashed cranberries with sugar

Nutritional value per 100 g:
- Sort, rinse and dry the raw materials.
- Grind in a blender or food processor.
- Pour cranberry puree into a saucepan, add sugar, mix thoroughly and set aside for an hour.
- Sterilize jars and lids.
- Fill the jars and tighten the lids.

- Add honey to the mass and mix thoroughly.

Cranberries under sugar "jam"

Nutritional value per 100 g:
- Rinse and dry the raw materials.
- Grind with a blender or meat grinder.
- Pour sugar and refrigerate for 10-12 hours.
- Arrange the mass in banks so that 1-2 cm of space is left for adding sugar.
- Cut circles with a diameter of 1-2 cm larger than the inner diameter of the cans from parchment.
- Put circles in jars and pour 2-3 tablespoons of sugar.
- Cover and refrigerate.

- Pour sugar and mix thoroughly.
- Put the mass in the freezer.
Dried berry

Nutritional value per 100 g:
- Rinse and dry the raw materials.
- Blanch the berries in boiling water for 1 minute - cooking sterilizes the raw materials.
- Cover with sugar for 3-4 hours.
- Put in a colander and let the syrup drain.
- Dry in a microwave, electric dryer, oven or in the sun in bulk in one layer on parchment.
Important! In the drying process, you can stir the berries from time to time. This way they dry out evenly.
Features, shelf life of blanks
Store both grated and dried berries should not be longer than winter. Micro- and macrocells disintegrate quite quickly, so 2-3 months are the best conditions for storing such blanks.
