Therefore, it is enough to simply sort out, removing wrinkled, soft or spoiled. By adding spices or fruit additives, you can change the taste and aroma of the drink.
Did you know? Berries used for making wine should not be washed. On their peel are natural yeast — fungi that cause fermentation.
Red Currant Wine Recipe
6 L 1.5–2 months
Nutritional value per 100 g:
- Put the branches of red currant into a clean container - a bowl or pan.
- Stretch them thoroughly with your hands.
- Filter the resulting berry puree through a metal sieve.
- Given that the juice of red currant is very acidic, it is necessary to dilute it with water in a ratio of 1: 2.
- Add sugar at the rate of 1: 1. Stir until sugar is completely dissolved.
- Wash the jars and pour the prepared mixture into them, not topping up.
- Close cans with special lids for wine.
- To start the fermentation process, the containers with the drink must be in a warm place. For example, in the kitchen. The main thing is to choose a place where direct sunlight does not fall.
- The fermentation period will last about 3-4 weeks.
- 10-14 days after the start of fermentation, the precipitate must be removed. Prepare clean cans. Using a water level or hose, drain the beverage and leave the residue. In order not to capture the cloudy fermented layer, hold the tube while decanting above it.
- The prepared drink must be closed with wine lids and put in a cold room in order for it to finish. It can be a cellar, basement, balcony or any other cool place. The maturation period is 25 days.
- The end of the process is easily determined by the fact that sediment appears again at the bottom, the foam subsides, and the wine becomes clear and transparent. Strain the drink and place it in a permanent storage place.
