Alexey Sinelnikov worked all his life in law enforcement, and when he retired, he decided to find a new favorite business. A cheese fan was never and was not interested in its production. The impetus for cheese making was a small home cheese factory. First, Alex prepared cheese for himself and his loved ones, and soon found a room for production on the territory of the former military camp.
Today, under the brand name "Perechinskaya Manufactory", 4 types of products with 15 different tastes are produced. Aleksey does not stop at the already known additives to cheese and is constantly in a creative search, experimenting with a wide variety of tastes. So, in the product range there is cheese with the addition of linden. According to the cheese maker, no one has done this yet. Cheese with the addition of dark Czech beer is also being prepared. According to the entrepreneur, after a month of aging, the cheese has a grain aftertaste and notes of malt.Alexei dreams of using only those products that are in Transcarpathia, namely, in the Perechinsky district, where the production is located, for making cheese. According to him, about a dozen plants grow here that can be added to cheeses and make them special. In particular, he plans to use blueberry and mulberry juice.
Currently, Alexey Sinelnikov cooks cheeses twice a week, using 0.5 tons of milk. He buys raw materials for their production in the Beregovsky district, but plans to open his own farm for 15 cows.Cheese at Perechinsky Manufactory has been ripening for at least a month, but there are also cheeses that have been waiting for their time for 3 years. Alexey Sinelnikov dreams that tourists come to Perechin specifically for cheese, because here it is made with love for people and their work.
