On the basis of the Vereshchagin Dairy, which operates at the Vologda State Dairy Academy, there is a special experimental workshop.
Employees of this workshop often conduct various experiments with dairy products, inventing new types of milk processing and unique products. Not so long ago, researchers were pleased with another achievement in the field of dairy food products - they presented to the audience an innovative nano-ice cream made on the basis of a concentrate extracted from whey.
“Using nanofiltration, we extract the concentrate and mix it with sugar, whole milk and a fraction of butter,” Vologda experimenters reveal production secrets. “This is the raw material for ice cream, which we transfer to the production departments of the dairy and there they make full-fledged ice cream from it.”
According to the developers, this ice cream has a number of useful qualities, saturates the body with the necessary amino acids, which are many in serum and in concentrate from it. In addition, this ice cream is much less high-calorie than the one we used to buy in supermarkets.
“This has not happened before in Russia,” the Vologda experimenters boldly declare. “First it will appear in the refrigerators of Vologda stores, and then, for sure, it will win the love of ice cream lovers all over the country!”
